Roman Pan Pizza – Fresh Anchovies and Cherry Tomatoes

Introduction

Although this recipe’s ingredients are basic and simple, a creative and tasty recipe can still be made. I will show you how to make a very crunchy Pizza in Teglia alla Romana with a 3D effect as well as a contrast between the base’s crispness, the stracciatella cheese’s smoothness and the anchovies’ freshness. In the end, we will add cherry tomatoes and caper’s fruits, to make the anchovies stand out, and parsley, which is very much appreciated with fish.

Ingredients
  • Tomato sauce

  • Fresh anchovies

  • Stracciatella cheese

  • Cherry tomatoes

  • Caper’s fruits (Cucunci)

  • Parsley

  • Extra Virgin Olive Oil

  • Salt

  • Oregano

Preparation

First of all, you need to put some flour on our table to roll out the pizza. Then, you take the pizza dough, lay it down on the flour and gently knead it until it is almost the same size of our baking tin. Afterwards, you oil the baking tin with a little bit of extra virgin olive oil by using a brush or some paper towel. You can now put the pizza in the tin so that it adheres well to the edges. Next, you take the already salted tomato and brush our base in order to make it slightly red. Before putting the pizza in the oven, you need to add a tiny bit of olive oil. The pizza will bake for 5-6 minutes at 300°. While the pizza is cooking, you can prepare the other ingredients. Let’s start with the caper’s fruits: cut out the stalk into thin slices. Let’s chop the parsley. When it comes to preparing the cherry tomatoes, you only need to cut them in half, add some sugar, oregano and a pinch of salt. Now, cook in the oven for one hour and half at 170°. Finally, cook the anchovies with a little bit of Extra Virgin Olive Oil (they will cook quicker). Our Pizza in Teglia is ready! Let’s take it out of the oven, cut it in slices and stuff it. Stracciatella cheese is the first ingredient to be laid on the Pizza in order to hold all the other ingredients together. Let’s place cherry tomatoes, caper’s fruits and anchovies without crushing them against each other and to give volume and a three-dimensional form to the Pizza. To conclude, you can add a little bit of olive oil and a tiny bit of parsley.
