This recipe is an easy, quick and very fanciful idea for aperitifs and starters: fried pizza gnocchi very good to eat both hot and cold. They are also matched with many different types of sauces from the most refreshing and summery to the hottest and wintery.
First, you need to take a generous portion of risen pizza dough at room temperature and put it on the previously floured table. After, you will cut the pizza dough in stripes, add some flour and cut them again into small gnocchi. Now, you will need to sift the gnocchi and get rid of the excessive quantity of flour. Then, put the gnocchi in the pre-heated oil and fry them. Once they become gold on the outside, it means they are ready. Before seasoning them, you need to absorb the oil with some kichen towls. Now, you can prepare the dressing: put parsley, some anchovies, capers and a generous quantity of EVO oil in a mixer. You will obtain a bright green sauce to use as a condiment for gnocchetti al pomodoro sauce. After, you need to put some pre-cooked tomato sauce in a small bowl, add the fried gnocchetti on the top and finish with the tasty and colourful parsley sauce.
